I use the xenon + 7.0 build on a fire stick 4K max. There are a lot of things I don’t use (kids & games, for example). Space is limited on a fire stick and I assume getting rid of unused addons would both give me more memory and speed up general processes. I mainly use Seren, Venom, The Crew and The Oath for movies & tv, so I don’t want to uninstall anything they need, but the question is, which repos & other addons can I get rid of safely? Similarly, would turning off automatic update for stuff I don’t use speed things up significantly?

If space is a concern I’d move kodi with all those builds and addons to a USB.
But for conversation sake, I’d use kodi with one or two addons.
The crew and seren are my favorite. That will help cut down on your space and cache.
I’ve actually moved my copy of Kodi to a usb drive but my wife has an older fire stick that doesn’t support usb. Also, whenever either of us starts kodi and tries to do anything there’s a long delay (up to 5 minutes or more!) before the 1st or 2nd time we can do something like access search or play
a movie from favorites. I assume this is because things are updating in the background. It usually helps if I go to Firestick’s manage apps menu and delete the cache, bu sometimes I have to reboot the whole Firestick. One reason I don’t want to switch to just a few individual addons without a build is that I like things like using a search function that will give me choices from all the apps, since I often have to use more than one to find the right cached torrents.
In that case it may be more beneficial to upgrade to something that has more internal storage. Kodi is a resource hogg, the more you add to it the more it uses.
I understand why everyone wants to use builds with addons, but the side effect is the cost of ram and storage use.
