My Understanding;

Surfshark has four physical servers. Amsterdam, London, New York and Berlin.
They use virtual servers in order to reach as many locations as possible with better connection speeds. By combining several virtual locations, they provide better connection speeds and a wider choice of protocols. There are about 3200 servers currently exist in over 65+ countries.

Don’t want anyone to know what or where I surf!

Instead of using Bypass for Youtube with VPN on, you could try and change to OpenVPN protocol and see if that changes anything. That protocol features Camouflage mode anyway. Try both UDP and TCP.

I bypass YouTube, but if you use it almost exclusively I can understand you wishing you could use VPN.

Oh, yes you may select individual servers within a location. On the left-hand side of the screen, there are 3 buttons at the top. The first button has “locations” and that shows you the countries. The second button lists individual servers within that region. I found it because like you, I liked having the ability to try different servers in my location. IPVanish had a much better selection. Surfshark doesn’t slow down the downloading when running as IP did.
